Mac & Cheese for Grownups…

I chose “grownups” over “adults” because I’m still using The Traditional Blue Box stuff… And before you badger me about how it isn’t real mac and cheese—yeah, yeah I know. But it is tasty, and delivers the familiar from-yer-childhood flavour you used to love and know…

I buy the stuff from Sam’s, in a case of twelve boxes, because it’s nearly as cheap as the cheap store brands, which you could also use… Walmart’s house brand was about 3/$1 last time I checked, and it was actually decent stuff.

The first thing you have to do (if you’re like me) is get your head around what we’re about to do: Open one box, take the cheese packet out, and throw the rest of the box away. Look, the pasta is crap, okay? I mean, pasta is pasta, right? But really—this pasta is crap. It’s only for nostalgia that we’re not throwing away the pasta from the other box…

Boil up some water and cook your pasta, and drain it. Add a tablespoon of butter, two tablespoons of sour cream, and some milk-of-your-choice (I drink skim, but for this, I use 1/4 c. of half and half). Mix. Then add the cheese. Mix. Then add the pasta.

Take a taste. Nice and cheesy, eh?

(Origin of this recipe: I’m finding that if I eat food that doesn’t taste good, I overeat, as my brain says “We must keep eating, because surely there is something good somewhere down there!”—I overeat on the prepared-according-to-boxed-directions stuff… but this satisfies me such that I can eat a normal serving and end up happier, not overeating, without the upset tummy that overeating gives anyway… YMMV)
